Ingredients

- 2 teaspoons baking powder

- 1/4 cup granulated sugar
- 1 large egg
- 1/2 cup milk
- 1/4 cup melted butter
- 2 ripe peaches, peeled and diced

- Powdered sugar for dusting
Instructions
- In a large bowl, whisk together the flour, baking powder, salt, and granulated sugar.
- In a separate bowl, whisk the egg, milk, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Gently fold in the diced peaches.
- Heat about 2 inches of vegetable oil in a deep skillet to 350 degrees Fahrenheit (175 degrees Celsius).
- Carefully drop spoonfuls of batter into the hot oil, about 3 to 4 at a time.
- Fry for 2 to 3 minutes per side, until golden brown.
- Remove the fritters with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- Dust generously with powdered sugar before serving warm.
