Description

A recipe for chicken scampi similar to the Olive Garden version, featuring shrimp and chicken in a lemon-garlic butter sauce served over linguine.

Ingredients

Scale
  • 1 pound linguine pasta
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 pound raw shrimp, peeled and deveined
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil, divided
  • 6 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine (optional, substitute with chicken broth)
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup heavy cream
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Cook linguine according to package directions. Drain and set aside.
  2. In a shallow dish, mix flour, salt, and pepper. Dredge chicken pieces in the flour mixture, shaking off excess.
  3. Heat 2 tablespoons of olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  4. Add the remaining 2 tablespoons of olive oil and 2 tablespoons of butter to the same skillet. Add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside with the chicken.
  5. Add the remaining 2 tablespoons of butter to the skillet. Add minced garlic and cook for 1 minute until fragrant.
  6. Pour in white wine (or broth) and let it simmer for 2 minutes, scraping up any browned bits from the bottom of the pan.
  7. Stir in chicken broth, lemon juice, and heavy cream. Bring the sauce to a gentle simmer.
  8. Return the cooked chicken and shrimp to the skillet. Stir in red pepper flakes, if using. Cook for 1-2 minutes to heat through.
  9. Toss the cooked linguine with the sauce, chicken, and shrimp.
  10. Stir in fresh parsley and Parmesan cheese. Serve immediately.

Notes

  • For a richer sauce, use more butter.
  • You can substitute chicken broth for white wine entirely if you prefer not to use alcohol.
  • Ensure the chicken is cut into uniform pieces for even cooking.
