  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 1/2 cup powdered sugar (for filling)
  • 1/4 cup unsalted butter, softened (for filling)
  • 1/4 cup shortening (for filling)
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  2. In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. In a separate bowl, mix the cocoa powder and milk until smooth.
  6. Gradually add the flour mixture and the cocoa mixture alternately to the butter mixture, beginning and ending with the flour mixture, mixing until just combined. Do not overmix.
  7. Drop rounded tablespoons of batter onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10 to 12 minutes. Let the cakes cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  9. To make the filling, beat the powdered sugar, softened butter, shortening, and vanilla extract together until smooth and creamy.
  10. Once the cakes are completely cool, spread a generous amount of filling on the flat side of one cake and top with another cake, flat side down, to form a sandwich.

Notes

  • You can store finished whoopie pies in an airtight container at room temperature for up to 3 days.
  • For a richer chocolate flavor, use dark cocoa powder.
