Description

A recipe for flavorful marinated and grilled skirt steak.


Ingredients

  • 2 lbs skirt steak or flank steak
  • 1 cup fresh orange juice
  • 1/2 cup fresh lime juice
  • 1/4 cup olive oil
  • 6 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Combine orange juice, lime juice, olive oil, garlic, cumin, oregano, salt, and pepper in a bowl. Whisk until mixed.
  2. Place the steak in a large zip-top bag or shallow dish. Pour the marinade over the steak, ensuring it is fully coated.
  3. Refrigerate for at least 4 hours, or preferably overnight.
  4. Remove the steak from the marinade and pat it dry with paper towels. Discard the remaining marinade.
  5. Preheat your grill to high heat.
  6. Grill the steak for 3 to 5 minutes per side for medium-rare, depending on thickness.
  7. Remove the steak from the grill and let it rest on a cutting board for 10 minutes before slicing.
  8. Slice the steak thinly against the grain.
  9. Sprinkle with fresh cilantro before serving.

Notes

  • For extra flavor, add 1/2 teaspoon of chili powder to the marinade.
  • If you do not have a grill, you can cook the steak in a hot cast-iron skillet.
