- 3 lbs russet potatoes, scrubbed and diced
- 1 cup heavy cream
- 1/2 cup milk
- 4 slices bacon, cooked and crumbled
- 1 cup shredded sharp cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons butter, melted
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Grease a 9×13 inch baking dish.
- In a large bowl, combine the diced potatoes, heavy cream, and milk.
- Stir in the crumbled bacon, half of the cheddar cheese, salt, and pepper. Mix well.
- Pour the potato mixture into the prepared baking dish.
- Bake for 45 minutes, or until the potatoes are tender.
- Remove the dish from the oven. Top evenly with the remaining cheddar cheese.
- Return to the oven and bake for another 10 minutes, or until the cheese is melted and bubbly.
- Let the potatoes cool for 5 minutes before serving.
- Top each serving with a dollop of sour cream and a sprinkle of green onions.
Notes
- You can substitute Monterey Jack cheese for cheddar if you prefer a milder flavor.
- For extra richness, add 1/4 cup of cream cheese cubes to the potato mixture before baking.
