Description
A creamy and savory chicken soup inspired by the popular Marry Me Chicken dish.
Ingredients

- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup sun-dried tomatoes in oil, drained and chopped
- 2 cups fresh spinach
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
- Add onion to the pot and cook until softened, about 5 minutes.
- Stir in garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a simmer.
- Return the cooked chicken to the pot. Reduce heat to low, cover, and simmer for 10 minutes.
- Stir in heavy cream and Parmesan cheese until the cheese melts and the soup thickens slightly. Do not boil after adding cream.
- Stir in sun-dried tomatoes and spinach. Cook until spinach wilts, about 2-3 minutes.
- Taste and adjust seasoning if needed before serving.
Notes
- For a thicker soup, you can whisk 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the simmering soup before adding the cream.
- Use rotisserie chicken if you want to skip cooking the raw chicken initially.
