Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg, vanilla extract, lemon zest, and 2 tablespoons of lemon juice until combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the poppy seeds.
  6. Drop rounded teaspoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
