Description

A simple, travel-sustaining bread inspired by the Elven waybread.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup fine cornmeal
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold unsalted butter, cubed
  • 1/4 cup cold heavy cream
  • 1/4 cup cold water
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Gradually add the cold heavy cream and cold water, mixing until a stiff dough forms. Do not overmix.
  5. Turn the dough out onto a lightly floured surface. Knead briefly, about 5 times.
  6. Roll the dough out to about 1/4 inch thickness. Cut into small squares or diamond shapes.
  7. Place the shapes on the prepared baking sheet. Brush the tops lightly with the beaten egg wash.
  8. Bake for 12 to 15 minutes, or until the edges are lightly golden brown.
  9. Let the bread cool completely on a wire rack.
