A delightful strawberry cake with a crunchy topping.

- 1 box strawberry cake mix
- 1/2 cup vegetable oil
- 3 large eggs
- 1 cup water
- 1 cup crushed pretzels
- 1/2 cup packed brown sugar
- 1/4 cup all-purpose flour
- 1/2 cup cold unsalted butter, cut into pieces
- 1/4 cup chopped pecans (optional)
- 1 (8 ounce) container frozen whipped topping, thawed
- 1 (3 ounce) package strawberry gelatin
- 1 cup boiling water
- 1/2 cup cold water
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch pan.
- In a large bowl, combine cake mix, oil, eggs, and 1 cup water. Beat on medium speed for 2 minutes. Pour batter into prepared pan.
- In a separate bowl, combine crushed pretzels, brown sugar, flour, and butter. Mix with a pastry blender or your fingers until crumbly. Stir in pecans if using. Sprinkle topping evenly over cake batter.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. Let cool completely.
- In a small bowl, dissolve gelatin in boiling water. Stir in cold water. Let cool slightly.
- Pour the gelatin mixture over the cooled cake. Chill for at least 2 hours, or until firm.
- Spread thawed whipped topping over the gelatin layer before serving.
Notes
- For an extra crunch, you can add more crushed pretzels to the topping.
- Ensure the gelatin is slightly cooled before pouring to prevent melting the whipped topping.
