Ingredients

  • 1 pound pasta
  • 8 ounces cream cheese, softened
  • 4 ounces smoked cream cheese, softened
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package directions. Drain, reserving about 1 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  3. Add softened cream cheese and smoked cream cheese to the skillet. Stir until melted and smooth.
  4. Whisk in heavy cream and Parmesan cheese. Cook, stirring, until the sauce is heated through and slightly thickened.
  5. Add the drained pasta to the skillet with the sauce. Toss to coat evenly.
  6. If the sauce is too thick, add reserved pasta water a tablespoon at a time until desired consistency is reached.
  7. Season with salt and black pepper to taste.
  8. Serve immediately, garnished with fresh parsley.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the sauce.
  • You can substitute smoked gouda for the smoked cream cheese if needed.
