Irresistible Shrimp Scampi Pasta With White Wine Sauce

Description

A classic shrimp scampi pasta dish featuring plump shrimp in a garlic white wine sauce, tossed with your favorite pasta.


Ingredients

  • 1 pound linguine or spaghetti
  • 1/4 cup olive oil
  • 1 pound large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine
  • 1/4 cup fresh lemon juice
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons unsalted butter
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook pasta according to package directions. Reserve 1 cup of pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
  3. Add minced garlic and red pepper flakes (if using) to the same skillet. Cook until fragrant, about 1 minute.
  4. Pour in white wine and lemon juice. Bring to a simmer and cook for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.
  5. Stir in chopped parsley and butter. Cook until butter is melted and sauce is slightly thickened.
  6. Return shrimp to the skillet. Add drained pasta and toss to coat. If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
  7. Season with salt and pepper to taste. Serve immediately.

Notes

  • For a richer sauce, you can add a splash of heavy cream.
  • Garnish with extra parsley and a lemon wedge before serving.
