Description
A classic shrimp scampi pasta dish featuring plump shrimp in a garlic white wine sauce, tossed with your favorite pasta.
Ingredients
Scale
- 1 pound linguine or spaghetti
- 1/4 cup olive oil
- 1 pound large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup dry white wine
- 1/4 cup fresh lemon juice
- 1/4 cup chopped fresh parsley
- 2 tablespoons unsalted butter
- Salt and freshly ground black pepper to taste
Instructions
- Cook pasta according to package directions. Reserve 1 cup of pasta water before draining.
- While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
- Add minced garlic and red pepper flakes (if using) to the same skillet. Cook until fragrant, about 1 minute.
- Pour in white wine and lemon juice. Bring to a simmer and cook for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.
- Stir in chopped parsley and butter. Cook until butter is melted and sauce is slightly thickened.
- Return shrimp to the skillet. Add drained pasta and toss to coat. If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
- Season with salt and pepper to taste. Serve immediately.
Notes
- For a richer sauce, you can add a splash of heavy cream.
- Garnish with extra parsley and a lemon wedge before serving.
