Ingredients

  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup lemon juice
  • 1 cup fresh blueberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Combine graham cracker crumbs and 1/4 cup sugar in a bowl. Stir in melted butter until combined. Press mixture into the bottom of a 9-inch pie plate.
  2. In a separate bowl, beat cream cheese, 1/2 cup sugar, vanilla extract, and lemon juice until smooth.
  3. Pour cream cheese mixture over the crust.
  4. In a small saucepan, combine blueberries, 2 tablespoons sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until thickened. Let cool slightly.
  5. Spoon blueberry topping over the cheesecake.
  6. Chill for at least 4 hours, or until firm.

Notes

  • For a firmer crust, bake for 8-10 minutes at 350°F (175°C) and let cool completely before adding filling.
  • You can substitute other berries for blueberries.
