Ingredients

  • 1.5 lbs corn, kernels cut off the cob
  • 1/2 cup mayonnaise
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons lime juice
  • 1 tablespoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup finely chopped red onion
  • 1 jalapeño, seeded and minced (optional)

Instructions

  1. In a large bowl, combine the corn kernels, mayonnaise, cilantro, cotija cheese, lime juice, chili powder, salt, and pepper.
  2. Add the red onion and jalapeño (if using).
