Ingredients

  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste
  • Fresh basil, chopped (for garnish)

Instructions

  1. Cook pasta according to package directions. Reserve about 1 cup of pasta water before draining.
  2. While pasta is cooking, combine ricotta cheese, Parmesan cheese, lemon zest, lemon juice, and olive oil in a large bowl.
  3. In a small skillet, heat the olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Do not brown.
  4. Add the cooked garlic to the ricotta mixture.
  5. Add the drained pasta to the bowl with the ricotta mixture.
  6. Toss to combine, adding reserved pasta water a little at a time until the sauce reaches your desired consistency.
  7. Season with salt and black pepper to taste.
  8. Serve immediately, garnished with fresh basil.
