A tropical delight chicken recipe with a sweet and savory glaze.
Ingredients

- 1 whole chicken, cut into pieces
- 1/2 cup ketchup
- 1/4 cup soy sauce
- 1/4 cup pineapple juice
- 2 tablespoons brown sugar
- 1 tablespoon honey
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions
- In a bowl, whisk together ketchup, soy sauce, pineapple juice, brown sugar, honey, ginger, garlic, and red pepper flakes.
- Season chicken pieces with salt and pepper.
- Place chicken in a large bowl or resealable bag. Pour half of the marinade over the chicken, ensuring it is well coated. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator. Reserve the remaining marinade.
- Preheat your grill to medium-high heat.
- Remove chicken from marinade, discarding excess. Grill chicken for 6-8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
- During the last few minutes of grilling, brush the chicken with the reserved marinade.
- Serve hot.
Notes
- For oven baking, preheat oven to 400°F (200°C). Bake chicken for 35-45 minutes, basting with reserved marinade during the last 10 minutes.
- Garnish with fresh pineapple chunks and green onions if desired.
