A recipe for perfectly crispy homemade French fries.
Ingredients

- 2 large russet potatoes
- 4 cups vegetable oil for frying
- Salt to taste
Instructions
- Wash and peel the potatoes. Cut them into 1/4-inch thick fries.
- Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. Drain and pat them completely dry with paper towels.
- Heat the vegetable oil in a deep fryer or heavy-bottomed pot to 325°F (160°C).
- Fry the potatoes in batches for 5-7 minutes, until they are tender but not browned. Remove them from the oil and drain on paper towels.
- Increase the oil temperature to 375°F (190°C).
- Fry the potatoes again in batches for 2-3 minutes, until they are golden brown and crispy.
- Remove the fries from the oil and drain on paper towels. Season immediately with salt.
Notes
- Ensure potatoes are completely dry before frying to prevent splattering.
- Do not overcrowd the pot when frying.
