Description

A simple and delicious Mediterranean-inspired pasta dish featuring feta cheese and tomatoes.


Ingredients

  • 1 pound pasta
  • 1 pint cherry tomatoes, halved
  • 8 ounces feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • Fresh basil, chopped, for garnish

Instructions

  1. Cook pasta according to package directions. Reserve 1/2 cup pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes and cook until fragrant, about 1 minute.
  3. Add cherry tomatoes to the skillet and cook until they begin to soften and burst, about 5-7 minutes.
  4. Add the drained pasta, crumbled feta cheese, and reserved pasta water to the skillet. Toss to combine until the feta is slightly melted and coats the pasta.
  5. Season with salt and black pepper to taste.
  6. Serve immediately, garnished with fresh basil.

Notes

  • For a creamier sauce, add a splash more pasta water.
  • You can add other vegetables like spinach or zucchini.
