  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package directions. Drain, reserving about 1 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add mushrooms and cook until browned and tender, about 5-7 minutes.
  3. Add minced garlic to the skillet and cook for 1 minute until fragrant.
  4. Pour in heavy cream and bring to a simmer. Cook for 2-3 minutes until slightly thickened.
  5. Stir in Parmesan cheese until melted and the sauce is smooth. Season with salt and pepper.
  6. Add the drained pasta to the skillet with the sauce. Toss to coat. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
