Description
A quick and easy one-pan pasta dish with tender chicken and a rich, creamy Cajun sauce.

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup chicken broth
- 1/2 cup heavy cream
- 4 ounces uncooked fettuccine
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chicken and season with Cajun seasoning, salt, and pepper. Cook until browned on all sides. Remove chicken from skillet and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
- Stir in diced tomatoes, chicken broth, and heavy cream. Bring to a simmer.
- Add fettuccine to the skillet, stirring to submerge. Cover and cook for 10-12 minutes, or until pasta is al dente, stirring occasionally.
- Return chicken to the skillet. Stir in Parmesan cheese and parsley. Cook for 2-3 minutes, or until heated through and sauce has thickened.
Notes
- For a spicier dish, add a pinch of cayenne pepper.
- You can substitute shrimp for chicken.
- Garnish with extra parsley and Parmesan cheese before serving.
