Ingredients

  • 4 bell peppers
  • 1 cup cooked rice
  • 8 ounces cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped onion
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the bell peppers in half lengthwise and remove the seeds and membranes.
  3. In a medium bowl, combine the cooked rice, softened cream cheese, cheddar cheese, chopped onion, salt, and pepper. Mix well.
  4. Spoon the cream cheese mixture evenly into the bell pepper halves.
  5. Place the stuffed peppers in a baking dish.
  6. Bake for 25-30 minutes, or until the peppers are tender and the filling is heated through.
