Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a medium bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
  3. Add the chicken pieces to the marinade and toss to coat. Let marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  4. Thread the marinated chicken onto the skewers, leaving a small space between each piece.
  5. Preheat your grill to medium-high heat.
  6. Grill the skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Remove from grill and let rest for a few minutes before serving.
