Ingredients

- 1 boneless, skinless chicken breast
- 2 tablespoons pesto
- 2 slices of your favorite bread
- 1 tablespoon mayonnaise
- Salt and pepper to taste
- Optional: Lettuce, tomato slices
Instructions
- Cook the chicken breast until done. Let it cool slightly, then shred or slice it.
- Toast the bread slices.
- In a small bowl, mix the shredded chicken with pesto and mayonnaise. Season with salt and pepper.
- Spread the chicken mixture onto one slice of bread.
- Add lettuce and tomato if desired.
- Top with the other slice of bread.
