Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup Italian-seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 large eggs
  • 1/4 cup milk
  • 1/2 cup olive oil, divided
  • 1 loaf French bread, split lengthwise
  • 2 cloves garlic, minced
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut chicken breasts into 1-inch pieces.
  3. In a shallow dish, combine breadcrumbs, Parmesan cheese, and parsley.
  4. In another shallow dish, whisk eggs and milk.
  5. Dip chicken pieces into the egg mixture, then coat with the breadcrumb mixture.
  6. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  7. Cook chicken until golden brown and cooked through, about 5-7 minutes. Remove from skillet and set aside.
  8. In the same skillet, add the remaining 2 tablespoons of olive oil. Add minced garlic and cook until fragrant, about 1 minute.
  9. Spread the garlic mixture evenly over the cut sides of the French bread.
  10. Place the bread, cut-side up, on a baking sheet.
  11. Top each bread half with marinara sauce, then arrange the cooked chicken pieces over the sauce.
  12. Sprinkle mozzarella cheese over the chicken.
  13. Bake for 10-12 minutes, or until the cheese is melted and bubbly.
  14. Slice and serve immediately.

  • For extra flavor, you can add a pinch of red pepper flakes to the garlic mixture.
