- 1 pound boneless, skinless chicken breasts
- 1 cup Italian-seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 large eggs
- 1/4 cup milk
- 1/2 cup olive oil, divided
- 1 loaf French bread, split lengthwise
- 2 cloves garlic, minced
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
Instructions
- Preheat your oven to 400°F (200°C).
- Cut chicken breasts into 1-inch pieces.
- In a shallow dish, combine breadcrumbs, Parmesan cheese, and parsley.
- In another shallow dish, whisk eggs and milk.
- Dip chicken pieces into the egg mixture, then coat with the breadcrumb mixture.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Cook chicken until golden brown and cooked through, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of olive oil. Add minced garlic and cook until fragrant, about 1 minute.
- Spread the garlic mixture evenly over the cut sides of the French bread.
- Place the bread, cut-side up, on a baking sheet.
- Top each bread half with marinara sauce, then arrange the cooked chicken pieces over the sauce.
- Sprinkle mozzarella cheese over the chicken.
- Bake for 10-12 minutes, or until the cheese is melted and bubbly.
- Slice and serve immediately.
Notes
- For extra flavor, you can add a pinch of red pepper flakes to the garlic mixture.
- Ensure chicken is cooked through before assembling the bread.
