Ingredients

  • 2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/4 cup oyster sauce
  • 2 tablespoons black pepper, freshly ground
  • 1 tablespoon brown sugar
  • 1/4 cup chicken broth
  • Cooked rice, for serving

Instructions

  1. In a bowl, combine chicken pieces with soy sauce, cornstarch, and sesame oil. Marinate for at least 15 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add marinated chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
  4. Add onion and bell peppers to the skillet and stir-fry until tender-crisp, about 3-5 minutes.
  5. Add minced garlic and cook for 30 seconds until fragrant.
  6. Return chicken to the skillet.
  7. In a small bowl, whisk together oyster sauce, black pepper, brown sugar, and chicken broth.
  8. Pour sauce mixture over chicken and vegetables. Stir to coat.
  9. Cook for another 2-3 minutes until the sauce thickens and coats the chicken.
  10. Serve hot over cooked rice.
