- 2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1/4 cup oyster sauce
- 2 tablespoons black pepper, freshly ground
- 1 tablespoon brown sugar
- 1/4 cup chicken broth
- Cooked rice, for serving
Instructions
- In a bowl, combine chicken pieces with soy sauce, cornstarch, and sesame oil. Marinate for at least 15 minutes.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add marinated chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
- Add onion and bell peppers to the skillet and stir-fry until tender-crisp, about 3-5 minutes.
- Add minced garlic and cook for 30 seconds until fragrant.
- Return chicken to the skillet.
- In a small bowl, whisk together oyster sauce, black pepper, brown sugar, and chicken broth.
- Pour sauce mixture over chicken and vegetables. Stir to coat.
- Cook for another 2-3 minutes until the sauce thickens and coats the chicken.
- Serve hot over cooked rice.
Notes
- For extra spice, add a pinch of red pepper flakes with the garlic.
- You can substitute chicken breast for thighs, but adjust cooking time to prevent drying out.
- Chop vegetables into uniform sizes for even cooking.
