Description
A simple recipe for sweet and savory chicken cooked quickly in an electric pressure cooker.
Ingredients

- 1.5 lbs boneless, skinless chicken thighs or breasts
- 1/2 cup soy sauce
- 1/2 cup honey
- 1/4 cup water
- 2 tablespoons rice vinegar
- 4 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/4 teaspoon black pepper
- 1 tablespoon cornstarch
- 2 tablespoons cold water (for slurry)
- Optional: Green onions for garnish
Instructions
- Place chicken pieces in the inner pot of the Instant Pot.
- In a separate bowl, whisk together soy sauce, honey, 1/4 cup water, rice vinegar, minced garlic, ginger, and pepper.
- Pour the sauce mixture over the chicken.
- Secure the lid and set the vent to sealing.
- Cook on Manual/Pressure Cook High for 8 minutes.
- When cooking finishes, allow a Natural Pressure Release for 5 minutes, then manually release any remaining pressure.
- Remove the chicken and set aside.
- In a small bowl, whisk together cornstarch and 2 tablespoons cold water to create a slurry.
- Set the Instant Pot to Sauté mode (Normal setting).
- Pour the slurry into the liquid in the pot and stir constantly until the sauce thickens, about 1-2 minutes.
- Return the chicken to the pot and toss to coat with the thickened sauce.
- Serve immediately, garnished with green onions if desired.
Notes
- You can use chicken breasts, but thighs remain juicier.
- For thicker sauce, increase the cornstarch slightly.
- Serve this dish over rice or with steamed vegetables.
