- 4 large bell peppers
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can diced tomatoes, undrained
- 1 cup cooked rice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, brown the ground beef with the chopped onion until the beef is no longer pink. Drain off any excess grease.
- Stir in the minced garlic, diced tomatoes, cooked rice, salt, and pepper. Cook for 5 minutes, stirring occasionally.
- Spoon the beef mixture evenly into the prepared bell peppers.
- Place the stuffed peppers in a baking dish.
- Bake for 30-40 minutes, or until the peppers are tender.
- Top with shredded cheddar cheese during the last 5 minutes of baking.
Notes
- You can substitute ground turkey or chicken for ground beef.
- For a vegetarian option, use lentils or a mixture of vegetables instead of meat.
