Ingredients

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 cup cooked rice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, brown the ground beef with the chopped onion until the beef is no longer pink. Drain off any excess grease.
  4. Stir in the minced garlic, diced tomatoes, cooked rice, salt, and pepper. Cook for 5 minutes, stirring occasionally.
  5. Spoon the beef mixture evenly into the prepared bell peppers.
  6. Place the stuffed peppers in a baking dish.
  7. Bake for 30-40 minutes, or until the peppers are tender.
  8. Top with shredded cheddar cheese during the last 5 minutes of baking.
