Ingredients

  • 1 tablespoon butter
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 2 cups diced cooked ham
  • 3 medium potatoes, peeled and diced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup milk
  • 1/4 cup all-purpose flour

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until soft, about 5 minutes.
  3. Pour in chicken broth. Add ham, potatoes, thyme, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  5. In a small bowl, whisk together milk and flour until smooth.
  6. Slowly stir the milk mixture into the simmering soup.
  7. Cook, stirring constantly, until the soup thickens, about 5 minutes. Do not boil after adding milk.
  8. Serve hot.

Notes

  • For a thicker soup, increase the flour to 1/3 cup.
  • You can substitute vegetable broth for chicken broth.
