Description

Ingredients

  • 1 pound ground beef
  • 1 head cauliflower, riced (about 4 cups)
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 1/4 cup chopped onion
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and onion. Cook until the beef is browned and the onion is soft. Drain off any excess fat.
  3. Stir in the riced cauliflower, garlic powder, salt, and pepper into the skillet with the beef mixture. Cook for 5 minutes, stirring occasionally.
  4. Pour the heavy cream over the beef and cauliflower mixture. Stir to combine.
  5. Transfer the mixture to the prepared baking dish.
  6. Sprinkle the shredded cheddar cheese evenly over the top.
  7. Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  8. Let stand for 5 minutes before serving.

Notes

  • You can substitute ground turkey for ground beef.
  • For a richer flavor, add 1/2 cup of your favorite low-sugar tomato sauce with the cream.
