Simple recipe for grilling marinated mushroom skewers.
Ingredients

- 1 pound cremini mushrooms, whole or halved
- 1/4 cup olive oil
- 2 tablespoons soy sauce
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- Wooden or metal skewers
Instructions
- Soak wooden skewers in water for 30 minutes if using.
- In a bowl, whisk together olive oil, soy sauce, balsamic vinegar, oregano, garlic powder, and pepper to make the marinade.
- Add mushrooms to the marinade and toss to coat them evenly. Let them marinate for at least 15 minutes.
- Preheat your grill to medium heat.
- Thread the marinated mushrooms onto the skewers.
- Place the skewers on the preheated grill.
- Grill for 8 to 10 minutes, turning occasionally, until the mushrooms are tender and slightly charred.
- Remove from the grill and serve immediately.
Notes
- You can add chunks of bell pepper or onion between the mushrooms for variety.
- For extra flavor, brush the skewers with any remaining marinade during the last few minutes of grilling.
