Description

Simple recipe for grilling marinated mushroom skewers.


Ingredients

  • 1 pound cremini mushrooms, whole or halved
  • 1/4 cup olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. Soak wooden skewers in water for 30 minutes if using.
  2. In a bowl, whisk together olive oil, soy sauce, balsamic vinegar, oregano, garlic powder, and pepper to make the marinade.
  3. Add mushrooms to the marinade and toss to coat them evenly. Let them marinate for at least 15 minutes.
  4. Preheat your grill to medium heat.
  5. Thread the marinated mushrooms onto the skewers.
  6. Place the skewers on the preheated grill.
  7. Grill for 8 to 10 minutes, turning occasionally, until the mushrooms are tender and slightly charred.
  8. Remove from the grill and serve immediately.

Notes

  • You can add chunks of bell pepper or onion between the mushrooms for variety.
  • For extra flavor, brush the skewers with any remaining marinade during the last few minutes of grilling.
