Description

Ingredients

  • 1 cup cooked quinoa
  • 1 medium zucchini, grated and squeezed dry
  • 1/2 cup shredded Parmesan cheese
  • 1/4 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons olive oil for frying

Instructions

  1. Combine the cooked quinoa, squeezed zucchini, Parmesan cheese, flour, eggs, minced garlic, salt, and pepper in a medium bowl. Mix until just combined.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Drop spoonfuls of the mixture into the hot oil, flattening them slightly to form fritters. Do not overcrowd the pan.
  4. Cook for 3 to 4 minutes per side, until golden brown and cooked through.
  5. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
  6. Serve warm.

Notes

  • Squeezing the moisture from the grated zucchini is important for crispy fritters.
