Instructions
- Whisk together flour, baking powder, salt, and sugar in a medium bowl.
- In a separate bowl, whisk together milk, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix. The batter will be slightly lumpy.
- Pour about 2 inches of vegetable oil into a deep, heavy-bottomed pot or Dutch oven. Heat the oil to 375 degrees Fahrenheit (190 degrees Celsius).
- Transfer the batter to a funnel with a small opening or a pastry bag fitted with a small round tip.
- Carefully drizzle the batter into the hot oil in a circular or zigzag pattern to create small, bite-sized shapes. Work in batches to avoid overcrowding the pot.
- Fry for about 1 to 2 minutes per side, until golden brown.
- Remove the funnel cake bites with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- Dust generously with powdered sugar before serving warm.
