A simple pasta soup inspired by classic French onion soup flavors.
Ingredients

- 1 tablespoon olive oil
- 1 large yellow onion, thinly sliced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup water
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces small pasta, like elbow macaroni or small shells
- 1/2 cup shredded Gruyère cheese
- 1/4 cup shredded Parmesan cheese
Instructions
- Heat olive oil in a large pot over medium heat.
- Add sliced onion and cook slowly for 15 to 20 minutes, stirring occasionally, until deeply caramelized and brown.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in beef broth and water. Add thyme, salt, and pepper. Bring the mixture to a boil.
- Add the pasta and cook according to package directions until tender.
- Ladle soup into bowls. Top each serving with a mix of Gruyère and Parmesan cheese.
- Serve immediately.
Notes
- For richer flavor, use high-quality beef broth.
- You can toast small slices of baguette and place them on top of the cheese before broiling for a traditional French onion soup topping, if desired.
