Description
Crispy roasted potatoes coated in a rich garlic herb butter.

			- 2 pounds small potatoes, quartered
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 tablespoons unsalted butter, melted
- 4 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh thyme
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the quartered potatoes with olive oil, salt, and pepper.
- Spread the potatoes in a single layer on a baking sheet.
- Roast for 25-30 minutes, or until tender and golden brown, flipping halfway through.
- While the potatoes are roasting, combine the melted butter, minced garlic, parsley, rosemary, and thyme in a small bowl.
- Once the potatoes are done, remove them from the oven and drizzle the garlic herb butter over them. Toss to coat evenly.
- Return the potatoes to the oven for another 5 minutes to allow the butter to meld with the potatoes.
- Serve hot.
Notes
- For extra crispy potatoes, ensure they are dry before tossing with olive oil.
- You can substitute other herbs like chives or oregano.
- Feel free to add a pinch of red pepper flakes for a little heat.
