Ingredients

  • 2 pounds small potatoes, quartered
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the quartered potatoes with olive oil, salt, and pepper.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast for 25-30 minutes, or until tender and golden brown, flipping halfway through.
  5. While the potatoes are roasting, combine the melted butter, minced garlic, parsley, rosemary, and thyme in a small bowl.
  6. Once the potatoes are done, remove them from the oven and drizzle the garlic herb butter over them. Toss to coat evenly.
  7. Return the potatoes to the oven for another 5 minutes to allow the butter to meld with the potatoes.
  8. Serve hot.

  • For extra crispy potatoes, ensure they are dry before tossing with olive oil.
  • You can substitute other herbs like chives or oregano.
