- 2 pounds baby potatoes, halved or quartered
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the potatoes with olive oil, minced garlic, salt, and pepper until evenly coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast for 25-30 minutes, or until the potatoes are tender and golden brown, flipping halfway through.
- Remove the baking sheet from the oven and sprinkle the Parmesan cheese over the potatoes.
- Return to the oven for another 5 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh parsley, if desired, before serving.
Notes
- For crispier potatoes, ensure they are dry before tossing with oil.
- You can add other herbs like rosemary or thyme for extra flavor.
