Ingredients

  • 1 pound linguine or spaghetti
  • 2 tablespoons olive oil
  • 1.5 pounds large shrimp, peeled and deveined
  • 6 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup dry white wine (like Pinot Grigio or Sauvignon Blanc)
  • 1/2 cup chicken broth
  • 1/4 cup unsalted butter
  • 1/4 cup chopped fresh parsley
  • Salt and freshly ground black pepper to taste
  • Lemon wedges for serving

Instructions

  1. Cook pasta according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 1-2 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
  3. Add minced garlic and red pepper flakes (if using) to the same skillet. Cook for about 1 minute until fragrant, being careful not to burn the garlic.
  4. Pour in the white wine and chicken broth. Bring to a simmer and cook for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.
  5. Reduce heat to medium-low. Stir in the butter until melted.
  6. Return the cooked shrimp to the skillet. Add the drained pasta and chopped parsley. Toss to combine.
  7. If the sauce is too thick, add a little reserved pasta water, a tablespoon at a time, until you reach your desired consistency.
  8. Season with salt and pepper to taste.
  9. Serve immediately with lemon wedges.

Notes

  • For a richer sauce, you can add a splash of heavy cream along with the butter.
  • Feel free to add other vegetables like spinach or cherry tomatoes.
