Description

A rich and creamy Cajun-spiced shrimp linguine dish.


Ingredients

  • 1 pound linguine
  • 2 tablespoons olive oil
  • 1 pound large shrimp, peeled and deveined
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook linguine according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
  3. Add onion and bell pepper to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  4. Stir in diced tomatoes, heavy cream, Cajun seasoning, salt, and pepper. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  5. Stir in Parmesan cheese until melted and sauce is smooth.
  6. Return shrimp to the skillet and cook until heated through, about 2 minutes.
  7. Add cooked linguine to the skillet and toss to coat with the sauce.
  8. Garnish with fresh parsley before serving.

Notes

  • For extra spice, add a pinch of cayenne pepper.
  • You can substitute chicken or andouille sausage for shrimp.
