Easy and delicious chicken fajitas packed with colorful peppers and onions.
Ingredients

- 1.5 lbs boneless, skinless chicken breasts, sliced thinly
- 1 large onion, sliced
- 2 bell peppers (any color), sliced
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- Flour tortillas, for serving
- Optional toppings: salsa, sour cream, guacamole, shredded cheese
Instructions
- In a bowl, toss the sliced chicken with chili powder, cumin, paprika, garlic powder, cayenne pepper (if using), salt, and pepper.
- Heat olive oil in a large skillet or cast-iron pan over medium-high heat.
- Add the seasoned chicken to the hot skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- Add the sliced onions and bell peppers to the same skillet. Cook, stirring occasionally, until tender-crisp, about 5-7 minutes.
- Return the cooked chicken to the skillet with the vegetables. Stir to combine and heat through.
- Warm the flour tortillas according to package directions.
- Serve the chicken and vegetable mixture in warm tortillas with your favorite toppings.
Notes
- For extra flavor, marinate the chicken in the spices for at least 30 minutes before cooking.
- Adjust the cayenne pepper to your spice preference.
- You can use a variety of bell peppers for a colorful dish.
