Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, sliced thinly
  • 1 large onion, sliced
  • 2 bell peppers (any color), sliced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • Flour tortillas, for serving
  • Optional toppings: salsa, sour cream, guacamole, shredded cheese

Instructions

  1. In a bowl, toss the sliced chicken with chili powder, cumin, paprika, garlic powder, cayenne pepper (if using), salt, and pepper.
  2. Heat olive oil in a large skillet or cast-iron pan over medium-high heat.
  3. Add the seasoned chicken to the hot skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  4. Add the sliced onions and bell peppers to the same skillet. Cook, stirring occasionally, until tender-crisp, about 5-7 minutes.
  5. Return the cooked chicken to the skillet with the vegetables. Stir to combine and heat through.
  6. Warm the flour tortillas according to package directions.
  7. Serve the chicken and vegetable mixture in warm tortillas with your favorite toppings.
