Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1 bag tortilla chips
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped red onion
  • 1/4 cup chopped cilantro
  • Optional toppings: sour cream, jalapeños, avocado

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season chicken breasts with salt, pepper, smoked paprika, garlic powder, and onion powder.
  3. Place seasoned chicken in a baking dish and bake for 25-30 minutes, or until cooked through.
  4. Remove chicken from oven and shred it using two forks.
  5. Stir in BBQ sauce until chicken is well coated.
  6. Spread tortilla chips in a single layer on a baking sheet.
  7. Top chips with shredded BBQ chicken, shredded cheddar cheese, and chopped red onion.
  8. Bake for 5-7 minutes, or until cheese is melted and bubbly.
  9. Garnish with chopped cilantro and any optional toppings before serving.
