Cheesy and delicious BBQ pulled chicken nachos perfect for a crowd.
Ingredients

- 1 pound boneless, skinless chicken breasts
- 1 cup BBQ sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 1 bag tortilla chips
- 2 cups shredded cheddar cheese
- 1/2 cup chopped red onion
- 1/4 cup chopped cilantro
- Optional toppings: sour cream, jalapeños, avocado
Instructions
- Preheat your oven to 375°F (190°C).
- Season chicken breasts with salt, pepper, smoked paprika, garlic powder, and onion powder.
- Place seasoned chicken in a baking dish and bake for 25-30 minutes, or until cooked through.
- Remove chicken from oven and shred it using two forks.
- Stir in BBQ sauce until chicken is well coated.
- Spread tortilla chips in a single layer on a baking sheet.
- Top chips with shredded BBQ chicken, shredded cheddar cheese, and chopped red onion.
- Bake for 5-7 minutes, or until cheese is melted and bubbly.
- Garnish with chopped cilantro and any optional toppings before serving.
Notes
- For a spicier nacho, add a pinch of cayenne pepper to the chicken seasoning.
- You can cook the chicken in a slow cooker on low for 4-6 hours if preferred.
