A quick and easy quesadilla filled with savory BBQ chicken and melted cheese.
Ingredients

- 1 cup cooked shredded chicken
- 1/4 cup BBQ sauce
- 2 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1 tablespoon butter or oil
Instructions
- In a bowl, mix the shredded chicken with BBQ sauce.
- Lay one tortilla flat. Sprinkle half of the cheddar and Monterey Jack cheese over one half of the tortilla.
- Top the cheese with the BBQ chicken mixture.
- Sprinkle the remaining cheese over the chicken.
- Fold the other half of the tortilla over the filling. Repeat with the second tortilla.
- Heat butter or oil in a skillet over medium heat.
- Carefully place the quesadilla in the skillet. Cook for 3-5 minutes per side, until golden brown and the cheese is melted.
- Remove from skillet, cut into wedges, and serve immediately.
Notes
- You can use leftover rotisserie chicken for convenience.
- Adjust the amount of BBQ sauce to your preference.
- Serve with your favorite toppings like sour cream, salsa, or guacamole.
