Ingredients
Scale
- 1 lb mixed vegetables (e.g., carrots, broccoli, potatoes)
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Wash and chop all vegetables into uniform, bite-sized pieces.
- Place the chopped vegetables in a large bowl.
- Drizzle the olive oil over the vegetables.
- Sprinkle the salt, pepper, and garlic powder over the vegetables.
- Toss everything together until the vegetables are evenly coated.
- Spread the coated vegetables in a single layer on a baking sheet.
- Roast for 25 to 35 minutes, stirring halfway through, until the vegetables are tender when pierced with a fork.
Notes
- For crispier edges, use parchment paper on your baking sheet, but avoid overcrowding the pan.
- You can substitute other root vegetables like parsnips or sweet potatoes.
- Toss with fresh herbs like rosemary or thyme before roasting for added flavor.
