Description

A simple recipe for traditional braised veal shanks.

  • 4 veal shanks (about 1.5 inches thick)
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup dry white wine
  • 2 cups beef broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Season the veal shanks lightly with salt and pepper. Dredge each shank in flour, shaking off any excess.
  2. Heat olive oil and butter in a large Dutch oven over medium-high heat. Brown the veal shanks on both sides, working in batches if necessary. Remove the browned shanks and set aside.
  3. Add the onion, carrots, and celery to the Dutch oven. Cook until softened, about 5 to 7 minutes.
  4. Add the minced garlic and cook for 1 minute more until fragrant.
  5. Pour in the white wine and scrape up any browned bits from the bottom of the pot. Let the wine reduce by half.
  6. Stir in the diced tomatoes, beef broth, bay leaf, and thyme. Season with salt and pepper.
  7. Return the veal shanks to the pot, ensuring they are mostly submerged. Bring the liquid to a simmer.
  8. Cover the Dutch oven and transfer it to a preheated oven at 325 degrees Fahrenheit (160 degrees Celsius).
  9. Braise for 2 to 2.5 hours, or until the meat is very tender and easily pulls away from the bone.
  10. Remove the bay leaf before serving. Garnish with fresh parsley.

Notes

  • For a richer flavor, you can substitute chicken broth for beef broth.
  • If you prefer a thicker sauce, remove the shanks near the end of cooking and reduce the sauce on the stovetop until it reaches your desired consistency.
