Description

A straightforward recipe for sweet, glazed yams.


Ingredients

  • 2 lbs sweet potatoes or yams, peeled and sliced into 1-inch rounds
  • 1/2 cup water
  • 1/2 cup packed brown sugar
  • 1/4 cup unsalted butter
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt

Instructions

  1. Place the sliced yams in a large saucepan.
  2. Add the water to the saucepan.
  3. Bring the water to a simmer over medium heat, cover, and cook for 10 minutes until slightly tender.
  4. In a separate small saucepan, combine the brown sugar, butter, cinnamon, nutmeg, and salt.
  5. Heat this mixture over low heat, stirring until the butter melts and the sugar dissolves, creating a syrup. Do not boil.
  6. Pour the syrup mixture over the partially cooked yams in the first saucepan.
  7. Increase the heat to medium-low, cover, and cook for 15 to 20 minutes, stirring gently occasionally, until the yams are tender and coated in the glaze.
  8. Remove from heat and serve warm.

Notes

  • If you prefer a thicker glaze, remove the lid for the last 5 minutes of cooking.
  • You can substitute maple syrup for some of the brown sugar for a different flavor profile.
