Ingredients

  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 slices bacon, cooked and crumbled
  • 1 cup fresh spinach, chopped
  • 1/4 cup shredded cheddar cheese
  • 1 teaspoon olive oil

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an oven-safe skillet (about 8 inches).
  2. In a bowl, whisk together the eggs, milk, salt, and pepper until combined.
  3. Heat the olive oil in the skillet over medium heat. Add the chopped spinach and cook until wilted, about 2 minutes.
  4. Distribute the crumbled bacon and wilted spinach evenly over the bottom of the skillet.
  5. Pour the egg mixture over the bacon and spinach. Sprinkle the cheese on top.
  6. Cook on the stovetop for 3 to 5 minutes, until the edges begin to set.
  7. Transfer the skillet to the preheated oven. Bake for 15 to 20 minutes, or until the center is set and a knife inserted near the center comes out clean.
