- 1 pound pasta
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 teaspoon red pepper flakes
- 1/2 cup vegetable broth
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh basil, chopped
- Salt and black pepper to taste
Instructions
- Cook pasta according to package directions. Drain, reserving 1/2 cup of pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
- Stir in sun-dried tomatoes and red pepper flakes. Cook for 2 minutes.
- Pour in vegetable broth and bring to a simmer. Cook for 5 minutes, allowing the sauce to thicken slightly.
- Add the cooked pasta to the skillet. Toss to coat.
- Stir in Parmesan cheese and basil. Add reserved pasta water as needed to reach desired consistency.
- Season with salt and pepper to taste. Serve immediately.
Notes
- For a richer flavor, use chicken broth instead of vegetable broth.
- Add cooked chicken or shrimp for a complete meal.
- A squeeze of lemon juice at the end brightens the flavors.
