Description

Ingredients

  • 1 pound pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup vegetable broth
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain, reserving 1/2 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
  3. Stir in sun-dried tomatoes and red pepper flakes. Cook for 2 minutes.
  4. Pour in vegetable broth and bring to a simmer. Cook for 5 minutes, allowing the sauce to thicken slightly.
  5. Add the cooked pasta to the skillet. Toss to coat.
  6. Stir in Parmesan cheese and basil. Add reserved pasta water as needed to reach desired consistency.
  7. Season with salt and pepper to taste. Serve immediately.

  • For a richer flavor, use chicken broth instead of vegetable broth.
