Roasted Garlic Mashed Sweet Potatoes

Description

Creamy mashed sweet potatoes infused with the sweet, nutty flavor of roasted garlic.


Ingredients

  • 2 pounds sweet potatoes, peeled and cubed
  • 1 head garlic
  • 2 tablespoons olive oil, divided
  • 1/4 cup milk or cream
  • 2 tablespoons butter
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut off the top 1/4 inch of the garlic head. Drizzle with 1 tablespoon of olive oil. Wrap in foil.
  3. Roast garlic for 40-45 minutes, or until soft and fragrant.
  4. Meanwhile, place sweet potatoes in a large pot, cover with water, and bring to a boil. Cook for 15-20 minutes, or until tender. Drain well.
  5. Squeeze the roasted garlic cloves from their skins into a bowl. Mash with a fork.
  6. Add the drained sweet potatoes, mashed garlic, remaining 1 tablespoon olive oil, milk, and butter to the pot.
  7. Mash with a potato masher or fork until smooth and creamy.
  8. Season with salt and pepper to taste.

Notes

  • For a richer flavor, use heavy cream instead of milk.
  • Add a pinch of nutmeg for a warm spice note.
  • Garnish with fresh chives or parsley.
