Creamy mashed sweet potatoes infused with the sweet, nutty flavor of roasted garlic.
Ingredients

- 2 pounds sweet potatoes, peeled and cubed
- 1 head garlic
- 2 tablespoons olive oil, divided
- 1/4 cup milk or cream
- 2 tablespoons butter
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Cut off the top 1/4 inch of the garlic head. Drizzle with 1 tablespoon of olive oil. Wrap in foil.
- Roast garlic for 40-45 minutes, or until soft and fragrant.
- Meanwhile, place sweet potatoes in a large pot, cover with water, and bring to a boil. Cook for 15-20 minutes, or until tender. Drain well.
- Squeeze the roasted garlic cloves from their skins into a bowl. Mash with a fork.
- Add the drained sweet potatoes, mashed garlic, remaining 1 tablespoon olive oil, milk, and butter to the pot.
- Mash with a potato masher or fork until smooth and creamy.
- Season with salt and pepper to taste.
Notes
- For a richer flavor, use heavy cream instead of milk.
- Add a pinch of nutmeg for a warm spice note.
- Garnish with fresh chives or parsley.
