- 1 pound pasta, cooked and cooled
- 2 cups cooked chicken, diced
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup bell pepper, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup mayonnaise
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked pasta, diced chicken, cherry tomatoes, cucumber, red onion, and bell pepper.
- In a small bowl, whisk together the mayonnaise, olive oil, lemon juice, and Dijon mustard.
- Pour the dressing over the pasta and vegetable mixture.
- Add the chopped parsley and toss gently to combine.
- Season with salt and pepper to your preference.
- Chill for at least 30 minutes before serving.

- For a lighter version, use Greek yogurt instead of mayonnaise.
