Lemon Garlic Shrimp Pasta

Description

A quick and flavorful pasta dish with shrimp, lemon, and garlic.


Ingredients

  • 1 pound linguine
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup dry white wine
  • 1/4 cup fresh lemon juice
  • 2 tablespoons butter
  • 1/4 cup chopped fresh parsley
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook linguine according to package directions. Reserve 1 cup of pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat.
  3. Add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
  4. Add minced garlic and red pepper flakes to the skillet and cook until fragrant, about 1 minute.
  5. Pour in white wine and lemon juice, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 2 minutes.
  6. Stir in butter until melted. Return shrimp to the skillet.
  7. Add drained linguine and chopped parsley to the skillet. Toss to combine, adding reserved pasta water a little at a time if needed to create a sauce.
  8. Season with salt and pepper to taste. Serve immediately.

Notes

  • For a richer sauce, you can add a splash of heavy cream.
  • If you don’t have white wine, you can use chicken or vegetable broth.
