Ingredients

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Cooked rice, for serving

Instructions

  1. In a small bowl, whisk together honey, soy sauce, cornstarch, and water. Set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add bell peppers and onion to the skillet and stir-fry until tender-crisp, about 5 minutes.
  5. Add minced garlic and cook for 1 minute until fragrant.
  6. Return chicken to the skillet. Pour the honey garlic sauce over the chicken and vegetables.
  7. Stir and cook until the sauce thickens, about 2-3 minutes.
  8. Serve immediately over cooked rice.
