Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1/2 cup snap peas
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • Cooked rice, for serving

Instructions

  1. In a small bowl, whisk together soy sauce, honey, rice vinegar, ginger, and garlic.
  2. In another small bowl, whisk together cornstarch and water until smooth.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  5. Add broccoli, red bell pepper, yellow bell pepper, and snap peas to the skillet. Stir-fry for 3-5 minutes, until vegetables are tender-crisp.
  6. Return chicken to the skillet.
  7. Pour the soy sauce mixture over the chicken and vegetables. Bring to a simmer.
  8. Stir in the cornstarch mixture and cook, stirring constantly, until the sauce thickens, about 1-2 minutes.
  9. Serve immediately over cooked rice.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes to the sauce.
  • Feel free to add other vegetables like carrots, mushrooms, or onions.
