Description
A quick and flavorful chicken stir fry with a homemade teriyaki sauce.
Ingredients

- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon vegetable oil
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1/2 cup snap peas
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1 teaspoon cornstarch
- 2 tablespoons water
- Cooked rice, for serving
Instructions
- In a small bowl, whisk together soy sauce, honey, rice vinegar, ginger, and garlic.
- In another small bowl, whisk together cornstarch and water until smooth.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add broccoli, red bell pepper, yellow bell pepper, and snap peas to the skillet. Stir-fry for 3-5 minutes, until vegetables are tender-crisp.
- Return chicken to the skillet.
- Pour the soy sauce mixture over the chicken and vegetables. Bring to a simmer.
- Stir in the cornstarch mixture and cook, stirring constantly, until the sauce thickens, about 1-2 minutes.
- Serve immediately over cooked rice.
Notes
- For extra flavor, you can add a pinch of red pepper flakes to the sauce.
- Feel free to add other vegetables like carrots, mushrooms, or onions.
