- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 head romaine lettuce, chopped
- 1 cup croutons
- 1/4 cup grated Parmesan cheese
- For the dressing:
- 1/2 cup mayonnaise
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1/4 teaspoon Worcestershire sauce
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Season chicken breasts with salt and pepper.
- Grill chicken for 6-8 minutes per side, or until cooked through. Let rest, then slice.
- In a small bowl, whisk together mayonnaise, minced garlic, lemon juice, Dijon mustard, and Worcestershire sauce. Season with salt and pepper.
- In a large bowl, combine chopped romaine lettuce, sliced chicken, croutons, and Parmesan cheese.
- Add dressing and toss to coat.
- Serve immediately.
Notes
- For extra flavor, marinate the chicken in a mixture of olive oil, lemon juice, garlic, salt, and pepper for at least 30 minutes before grilling.
- You can make your own croutons by cubing stale bread, tossing with olive oil and herbs, and baking until golden brown.
